BBQ Cheddar Meatloaf Muffins

2 lbs. Meat loaf mix ground meat (for local ppl I got mine at Dutchway)
1/2 cup bread crumbs (I used garlic and herb)
4 tbs. BBQ sauce + extra for brushing on top
2 tbs. Worcestershire sauce
2 eggs whisked
1 cup shredded cheddar cheese (I used Kraft Mexican, a mix of cheddar and jack)
1 sweet onion
1 tbs. butter
salt and pepper

1.  Preheat oven to 425 degrees

 2.  First saute onions in butter until caramelized.

3.  Then mix meat, bread crumbs, BBQ sauce, Worcestershire sauce, eggs, cheese, onion and salt and pepper.  Use your hands... its messy but it works best!

4.  Grease large muffin pan.  Fill with meatloaf mixture.  Brush tops with extra BBQ sauce.

5.  Bake for 20 mins or until internal temp of 160 degrees.

I made creamed spinach and mashed potatoes with mine!! It was all really yummy!!!

I am determined to get the hang of this thing this year!!! Also if I am prepared enough to post my menus and recipes it means I've taken the time to come up with my menu and recipes!! :) I'm going to start next week.... So get ready!!! I think i'm going to post my menu on Sunday and then each night post the picture of the meal and the recipe.  Thats the plan, anyway!

Creamy Corn and Potato Chowder with Bacon... YUM!

Here is the recipe.  Its in my crock pot currently and smells amazing... i'm assuming is will tast amazing too!

1 can corn
1 can cream corn
1 12 oz can evaporated milk
4 cups chopped potatoes
salt and pepper to taste
6 slices of bacon cooked and crumbled

put all ingredients into crockpot and cook on low for 6 hours..
i would top with more bacon and some shredded cheese!! even though the recipes doesn't call for that!

Week of Jan 23-27 2012

Monday- NO dinner (insert your own meal here :) )

Tuesday-  Chicken Biscuit Bake (Recipe below)

Wednesday- Brown Sugar Balsamic Pork

Thursday- Sloppy Joes and FF

Friday-Steak

Chicken Biscuit Bake
2 cans condensed cream of chicken soup
1 cup milk
1/2 tsp dried thyme leaves
pepper to taste
4 cups cooked chicken
1 bag frozen veggie mix
1 can biscuits
Preheat oven to 350.  In saucepan heat soup, milk, thyme, pepper, chicken and veggies to boiling.  Boil and stir 3-5 mins.  Spread in ungreased 13x9 baking dish.  Separate dough into 8 biscuits and place evenly over hot chicken mixture.  Bake 35-40 mins or until biscuits are golden brown and no longer doughy on the bottom.

a little slow.....

I had great intentions when I first started my blog.  Although as you can see... life has been more important than a blog.  One reason why I started this was for myself.  I thought that if I had to post a menu every week on here it would force me to make and stick to my menu here at home.  Again... that hasn't happened either.

This week this was my menu (which as you will see I didn't stick to, but that's because I got the flu... so I guess that's an ok excuse!):

Monday- Quick Meal- Chicken Pattie and French Fries
Tuesday- Chicken Tortilla Soup (Recipe below)
Wednesday- Honey Ham Slice, Burssel Sprouts, Buttered Noodles, and Baked Beans
Thursday- Burritos (kit in a box)
Friday- Pork and Sauerkraut with Mashed Potatoes

Chicken Tortilla Soup Recipe
I found this in a recipe book a few years ago and have adapted it to my family's taste!! 
P.S. This is my husbands favorite meal!!

2 small cans Cream of Chicken Soup
1 soup can of water
1 can of Black Beans, rinsed
1 bag frozen corn
1/2 jar Salsa, medium or mild (2-3 cups)
1 lb. chicken breast cut into small pieces
2 cups shredded cheddar cheese
Bag of Tortilla Chips

Add soup, water, beans, corn, salsa and chicken to crockpot on low for 4 hours or until chicken is cooked.  15 mins before serving stir in 1 1/2 cups of cheese.  Portion out soup and sprinkle cheese on top.  Serve with chips.  Enjoy!!

Chicken Turnovers... YUM!

Here is what I made last night. It's super easy and really good. Even my husband like it.

3 oz. Cream cheese , softened
4 TBS. butter
2 c cooked chicken
Salt and pepper to taste
A few crushed croutons
2 TBS. milk
1 TBS. chopped onion
8 oz. can crescent rolls ( I use garlic butter flavored!!)

Blend cream cheese with 3 TBS. of melted butter until smooth. Add chicken, salt, pepper, milk and onion. Mix well and chill. Separate cressent rolls into 4 rectangles. Spoon meat mixture evenly between all 4 cressents. Pull all four corners of each cressent to top center and twist slightly. Brush 1TBS. of melted butter on top of each cressent and sprinkle with crushed croutons.

Bake at 350 degrees for 25-30 mins. Enjoy!!

I made green beans and instand brown rice to accompany this yummy dish!!

Saturday-  I normally plan a meal for Sat, but sometimes we go out to eat.  This Saturday is my Birthday.  YAYY!! So that means no cooking for me!
